I think coaches kick the XP until they 'have' to go for 2 because it's psychologically reassuring to 'be within a possession' of the tie. They seem just fine putting the game/season on one play that's, what, 45-55% odds?
I'm with you guys, but, I think the reasoning is that coaches don't want to do anything to throw off the (gulp) momentum. I agree that, in terms of strategy alone, it is indefensible. But, I can kind of get it: scoring a huge TD then following it up with the bad news that you actually still need two scores could be kind of deflating. But that's exactly why you go for two early, so you know ahead of time whether or not you'll need that second score. If you wait on the two point conversion and then miss it, it could be too late.
