With a 4 month old I have not had time to do much research, but here is what I am looking for.

A home office PC that has dual video cards so it can run 4 monitors and that is about it.  Decent hard drive space, simple ram, but it is not a gaming machine or anything.  (I have had a 4 monitor setup in the past--bought it from a former day trader)   With cloud backup I am not sure I need a RAID backup, plus there is software that can do it to external hard-drives.

Most of it is basic word processing, internet browsing, running simple internet marketing tool programs, remote desktop into servers, FTP, nothing memory or CPU intensive, but I'm impatient like anyone and like to have multiple programs/tabs/windows/etc. open at once.

I can put it together, but would prefer buy a box that has what I need.  Just want reliability, no hassle.

Any thoughts?

Nobody makes exactly what you want, this is a classic example of where building can save you a lot of money and get you exactly what you want. Also, depending on the size and resolution of the 4 monitors (it sounds like you don't intend or need to stretch 4 monitors over one desktop to game), this can be done via 1 video card if using Displayport, in other cases a pair of video cards might be the better option. Give us an idea of the size and setup you want for the monitors.
