Auto DVD authoring: resolution

We have a DVD player in the car that is the greatest invention since whenever.  I give two craps about talking to my kids on long trips: I want them quiet.
 
So I've made some DVDs foe the car but they end up getting scratched and stuff.  This is no big deal, I just make more.  I've also done things like hooked up a mobile Plex system, but this always ends up needing my attention and I don't want to give anything that doesn't absolutely need attention any attention.
 
A thought struck me - why the hell amd I just putting one movie per DVD on there?  The resolution on those TVs is such crap I should be able to really downgrade it, right?  That way I could also put like 5 movies per DVD on there so that we truly could let the kids pick and choose what they wanted for a, say, five hour drive.
 
Am I thinking in the right way?  I know nothing about video compression, etc.

If you get into multiple movies per disc then you're into the world of making menus and buttons and how would they access those buttons without a remote? Not worth the trouble.

Yeah, you're better off just building a soundproof privacy wall between the front and back seats.  Lock the power windows, engage the child door locks, problem solved.

That would have previously been an issue bit at this point my 8 year old can navigate the menus easily enough.  There is a remote for him to do that with...
